Blue Potatoes : You’ve Tried White & Sweet Potatoes, Time To Try The Antioxidant Rich Blue Spud

Yep, potatoes come in a striking blue variety that also come packed with nutrition too! You may find these rare varieties a bit harder to come by, but any decent farm store or local green grocer will stock them. The reason for their vibrant blue colour is the potent antioxidant anthocyanin, this has particular neuroprotective properties that make it winner over your regular white potato (although it still has its place). The blue variety supports short- term memory and reduces nervous inflammation. On top of this, their skins contain iodine which is key to thyroid regulation.
