The classic coffee bean has a hard outer shell and crumbly, dry core, whereas the green bean is moist and fleshy. The consequence of roasting is that levels of Chlorogenic acid is reduced which has been linked to reducing the onset of heart disease and diabetes, as well as boosting fat loss.
