The whole point of consuming fruits and vegetables is to ingest the vitamins and minerals that they are packed with. Some of you might be thinking that you need to peel them because the outer skin will contain pesticides and herbicides that the farmers use to spray them. Indeed, most of them will be sprayed with these chemicals that you don't want to ingest. My solution to you, is try to buy organic or local fruits and vegetables when you can especially with foods such as carrots and potatoes where all the goodness is right underneath the skin.
It is also worth mentioning that when buying your fruits and vegetables it is better to have them fresh rather than frozen. Fresh is best and it will help keep all the essential vitamins and antioxidants packed within the food. Next time you reach for the peeler, stop and think.
