Protein Powered Blueberry Muffins

If you’re stuck for ideas at breakfast, desserts, or mid-meals, then why not try a Protein Powered Blueberry Muffin!? Get the delicious taste of your regular blueberry muffin, only this time add some substance to what was a dirty, stinking empty calorie cake!

Ingredients

> 3 eggs
> 3 tbsp Vegetable oil
> 1/4 Cup Whipping Cream
> 5 scoops of the finest whey protein of choice
> 2 tspns baking powder
> 1/3 cup brown sugar
> 1 cup blueberries
> 1/2 cup low fat/fat free cream cheese
> 1/4 tspn ground cinnamon

Directions

Preheat oven to 375 F

- Prepare the muffin cups with non-stick spray

- Mix cream cheese and cinnamon into a mixing bowl

- Mix eggs, oil and cream together

- Add protein powder with baking powder and sugar (try Stevia for a natural sweetener alternative) and mix

- Add the protein powder, baking powder and sugar into the cream mixture, mixing thoroughly

- Combine both mixtures, as well as the berries, into the muffin cups

- Bake for 15-20mins until muffins begin to brown on top
